Pool experience

UNICO 20°87° offers a unique pool experience at each of its three pools. All pools offer poolside food and drink service as well as Cabanas that can be booked in advance.

La UNICA pool is large and lively—a place to socialize and hang out with a drink or two. Its sophisticated dark blue color provides a warmer water temperature.

Argentinian-style baked empanadas filled with your choice of:

Vegetarian Ceviche

Chickpeas, hearts of palm, caramelized chiles, chopped red onion, avocado, tomato, cilantro, and panela cheese, all mixed with avocado oil, and fresh lime juice. Served over a bed of roasted greens and hierba santa.

Hot Shrimp Ceviche

Spicy marinated shrimp, grilled, then mixed with red onion, anise star potato, cilantro, lemon juice, rosemary infused olive oil, and a roasted tomato sauce.

Tropical Fruit Ceviche

Fruit mixture of fresh mango, strawberries, melon, and pineapple, dotted with chopped red onion and cucumber. Dressed in lemon juice, mint, cilantro, olive oil, and minced garlic.

Aguachile with the Catch of the Day

The fish of the day bathed in a bright green chile and tomato sauce.

Peruvian Ceviche

Tender pieces of grouper, mixed with Leche de Tigre, toasted corn, onion, cilantro, and sweet potato

Nayarit-Style Shrimp Ceviche

Citrusy marinated shrimp, mixed with chopped tomato, cucumber, carrot, onion, and cilantro


Beef Fillet with Chimichurri

Fillet of beef, marinated with garlic and Dijon mustard, then grilled and served with chimichurri and a side salad of fresh tomatoes and hearts of palm

Yucatán-Style Grilled Chicken

Achiote marinated chicken breast, grilled and served with a side of roasted potatoes and two sauces—a garlic sour cream and a Xnipec salsa

Catch of the Day

Whole fried fish served with a salad of green tomatoes, hearts of romaine, red onion, and radishes


All-beef hamburger topped with melted Provolone cheese, hearts of romaine, caramelized onion, roasted tomatoes, and a crispy slice of turkey ham. Served with a honey mustard yogurt sauce

Lentil Burger

Vegetarian lentil burger, seasoned with the chef's spice blend and garnished with roasted onions, dehydrated tomatoes, and a green tomato chutney

Beef Hot Dog

Grilled all-beef hot dog, served on a housemade bun, and garnished with salsa, jalapeño peppers, and fries

Mixed Kafta

Lebanese-style beef and chicken kafta, seasoned with a mixture of cilantro, cumin, and nutmeg. Served with a garlic-mint yogurt sauce, and a side of tabbouleh

Salmon Sliders

Truffle oil marinated pieces of salmon, grilled, and topped with lettuce sprouts, red wine caramelized onions, agave honey, and mushrooms


The 20°87° pool is the pool most central, where guests can enjoy a swim up bar and daily energetic sets from a DJ. Its sophisticated dark blue color provides a warmer temperature on the water.


At La Escondida, guests can experience a true sense of escape, with supremely mellow music and comfy seating. The water temperature in this pool is a bit more refreshing, and features a hydro pool.
